Plus, it will be on the table in just 15 minutes!<\/h4>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>220g tofu, cubed<\/li>\n<li>85g ramen noodles<\/li>\n<li>4 cups salt-reduced vegetable stock<\/li>\n<li>1 tablespoon miso paste<\/li>\n<li>Leaves of 1 baby bok choy<\/li>\n<li>50g shiitake mushrooms, sliced<\/li>\n<li>1 fried or boiled egg<\/li>\n<li>Spring onions (to garnish)<\/li>\n<\/ul>\n<p><strong>Method<\/strong><\/p>\n<p>1. Cook tofu in olive oil until browned. Set aside.<\/p>\n<p>2.\u00a0In pot, boil 4 cups salt-reduced vegetable stock.<\/p>\n<p>3.\u00a0Add ramen noodles to stock and cook until soft for 2-3 minutes.<\/p>\n<p>4. Remove from heat. Stir in 1 tablespoon miso paste.<\/p>\n<p>5. Add leaves of 1 baby bok choy to pot and let wilt.<\/p>\n<p>6. Add 50g shiitake mushrooms, sliced. Cook until tender.<\/p>\n<p>7. Divide in bowls.
